Tampa Bay Chaine des Rotisseurs 2025 Induction Banquet

The Tampa Bay Bailliage gathered at Avila Golf and country Club to induct five new members into our local Chaine. More than 40 members turned out to enjoy an exquisite five-course “A Walk Through France” dinner expertly curated by Executive Chef Kent Specht (also Professional Member).

The Courses:

  • Sea Bream – Tomato and Saffron, Perrnod, Fennel Confit, paired with Moillard Bourgogne Chardonnay
  • Joyce Farms Heritage Poulet Rouge – Madiera Wine Sauce, Cream, Truffels, Morels, Oyster Mushrooms, Asparagus, paired with Louis Jadot Pinot Noir
  • Lamb Chop with Japanese Eggplant – Cassoulet, Cabernet Rosemaary Reduction, paired with Louis M. Martini Cabernet Sauvignon
  • Paris Brest, Pate Aux Choux – Pistachio Praline Mousseline, paired with Sparr Riesling
  • Cheese Plate, paired with Le Grande Courtage Blanc de Blancs
